Meet the chefs joining us in the Regina Kitchen

Marcus Beanaccordian title

Marcus is an award-winning chef, author, and television presenter, best known for winning *Iron Chef UK on Channel 4*, defeating a two Michelin-starred chef. A regular contributor on ITV’s *This Morning* and regular host at *Good Food Shows* around the country. Marcus combines media expertise with decades of hands-on culinary experience. Former owner of a successful pub/restaurant and cookery school in Shropshire, he has taught over 25,000 students to cook and now works as a private chef and hospitality consultant. Completing work with Chez Roux at Wimbledon 2025, Cheltenham Goldcup 2026 & Monaco Grand Prix with Tom Kerridge 2024. Including stages at Dinner By Heston Blumenthal.

Marcus brings a passion for seasonal & sustainable cooking showcasing the best ingredients inspired by his travels.

When Marcus isn’t cooking, he’s a keen Runner and will be completing London Marathon 2026 raising money for Parkinsons UK.

Cyrus Todiwalaaccordian title

Cyrus Todiwala is a chef, author, educationist, and entrepreneur whose name has become synonymous with innovation and excellence in Indian cuisine. He is Co-Patron of the iconic Café Spice Namasté, one of the UK’s most enduring restaurants, and the driving force behind Mr Todiwala’s Kitchen at Hilton London Heathrow Terminal 5, Mr Todiwala’s Kitchen in Lincoln Plaza London, and Mr Todiwala’s Petiscos in Buckhurst Hill. With Café Spice Namasté recognised as the world’s longest-running Michelin BIB restaurant, Cyrus continues to shape the landscape of modern Indian dining.

Originally from Bombay, Cyrus moved to London with his wife, Pervin, in the early 1990s. With little more than a handful of belongings but armed with extraordinary culinary skill and vision, he opened Café Spice Namasté, a restaurant that redefined expectations of Indian food in Britain. Through his bold use of regional ingredients, sustainable sourcing, and commitment to creativity, he established himself as one of the country’s most forward-thinking chefs.

Cyrus is as passionate about education as he is about food. A firm believer in sustainability, reducing food waste, and supporting British producers, he has been recognised with numerous environmental awards, including the Sustainability Champion Award from the London Chamber of Commerce. His dedication to training the next generation of chefs also inspired the creation of Zest Quest Asia, a competition he co-founded to promote classical Asian cuisine among student chefs.

An acclaimed author, Cyrus has published six cookbooks, including the best-selling Mr Todiwala’s Spice Box and his most recent title, Simple Spice Vegetarian. These celebrated works showcase the breadth of cyrus todiwala recipes, which balance authenticity, accessibility, and bold flavour.

Cyrus is a familiar face on television, appearing on BBC Saturday Kitchen, BBC Radio 4’s Food Programme—where he was named BBC Food Personality of the Year—and Channel 4’s Snackmasters, where he emerged victorious. Alongside media work, Cyrus has launched Mr Todiwala At Home, offering restaurant-quality meal kits and artisanal products such as spice blends, chutneys, and oils, bringing the essence of cyrus kitchen into homes nationwide.

Shivi Ramoutar accordian title

Shivi Ramoutar is a celebrated Caribbean cook, author, and broadcaster known for her vibrant, modern approach to island cuisine. Born in Trinidad into a colourful family, she was raised between the salty beaches of the Caribbean, the Leicestershire countryside (with a brief stint in New York), and the dynamic energy of London, which she now calls home.

Originally trained in Law, Shivi took a bold leap to follow her passion for food, carving out a distinctive voice in the UK’s culinary landscape. A classically trained pianist in her youth, she still finds joy in music, songwriting, and tap dancing—creative threads that echo through her cooking.

A mother of three “wildlings,” Shivi balances family life with a thriving career that spans television, publishing, and live dining experiences. She is the author of three acclaimed cookbooks—Caribbean Modern: Recipes from the Rum Islands, The Ice Kitchen: Fast Fresh Food to Fill Your Family and Your Freezer, and Cook Clever: One Chop, No Waste, All Taste—and has been dubbed “Caribbean Food Supremo” by The Guardian and “Queen of Contemporary Caribbean Cooking” by British Airways’ The Club magazine.

Through her much-loved supper clubs, brand collaborations, and media work, Shivi has championed Caribbean cuisine across the UK, bringing bold, fresh, and flavour-driven dishes to new audiences. She is also a passionate advocate for Caribbean culture and its rich culinary heritage.

A familiar face on British television, Shivi co-hosts ITV's Jimmy and Shivi's Farmhouse Breakfast and also appears on Saturday Kitchen, James Martin’s Saturday Morning, and This Morning. 

2026 marks the 10-year reissue of her debut cookbook, alongside the launch of her international supper club, The Nomad Table. She is also introducing her new Island Girl brand, beginning with her signature hot sauce inspired by her original supper club.

Karan Gokaniaccordian title

Karan Gokani grew up in Mumbai before moving to England in 2005 to study law at the University of Cambridge. Despite pursuing a successful career as a solicitor, his passion for food and hospitality never faded. Even while working in the legal world, Karan spent his free time in professional kitchens, nurturing a deep love for cooking. In 2012, he made the bold decision to leave law behind and dedicate himself fully to food, travelling across India and Sri Lanka to immerse himself in the diverse cuisines and cultures of the region.

Hoppers and culinary journey

In 2015, alongside the Sethi siblings, Karan co-founded Hoppers, the acclaimed Sri Lankan and South Indian restaurant in Soho. Its popularity soon led to two further openings—Marylebone in 2017 and King’s Cross in 2020—cementing Hoppers as one of the UK’s most vibrant and celebrated restaurant groups. The restaurants have become known for their lively atmosphere, bold spicing, and dishes that capture the spirit of Sri Lanka and southern India.

Through Hoppers, Karan has helped introduce a wider audience to the flavours, traditions, and stories of the region, combining authenticity with accessibility. His passion extends beyond the restaurants, as he regularly shares his knowledge and insights at food festivals, live cooking demonstrations, and events across the UK.

Writing & Media

Karan’s storytelling extends into writing, where he has contributed travel features and recipes inspired by Sri Lanka and southern India to national and international publications. His debut, Hoppers: The Cookbook (2022), became a bestseller, blending recipes with personal stories that celebrate the food and journeys behind Hoppers. His highly anticipated new book, Indian 101, continues this journey, offering readers an approachable guide to Indian cooking with over 100 recipes that simplify the complexity of the cuisine while retaining its depth and flavour.

Karan continues to champion South Asian cuisine, ensuring its richness and cultural heritage reach new audiences in the UK and beyond.

Crystelle Pereiraaccordian title

Crystelle Pereira is a cook, presenter and author. Born in North London to Kenyan born, Portuguese-Goan parents, and stole the hearts of the nation in the Great British Bake Off (Channel 4 and Netflix USA, 2021).

‘Flavour Kitchen’ (Hachette) was Crystelle’s debut cook book, and she’s an established food writer and recipe developer with credits including Guardian Feast, Waitrose, Telegraph, BBC Good Food, Ocado, and People Magazine.

TV credits include Good Morning America, The Today Show, Saturday Kitchen, Sunday Brunch, BBC Morning Live, and ITV’s Lorraine. Most recently, she was a series judge on Amazon Prime’s The World Cook Season 2, and in 2025 was named on the Forbes 30 Under 30 list for Arts & Culture.

The Flygeriansaccordian title

The Flygerians, founded by sisters Jess and Jo, are on a mission to put Nigerian cuisine firmly on London’s food map. Since 2016, the duo has been sharing the rich flavours and traditions of their heritage, blending authentic recipes with a modern street food twist. What started with pop-ups and street food stalls has grown into one of London’s most exciting Nigerian food ventures.

The Flygerians first made their mark by bringing bold Nigerian flavours to venues like Uber HQ and Dr Martens, where their food quickly captured attention. Known for their vibrant energy and passion, Jess and Jo built a loyal following before opening their permanent home in Peckham. Their bar and kitchen serve as a hub for the community, offering Londoners a chance to enjoy dishes that celebrate the warmth, spice, and colour of Nigerian cooking.

At the heart of The Flygerians’ work is a desire to share not just food, but culture. Their menus highlight beloved Nigerian classics and innovative new creations, each plate telling a story of family, heritage, and identity. With every event, supper club, and service, Jess and Jo bring people together through food, proudly showcasing the richness of Nigerian cuisine and carving out space for African food in the UK’s culinary scene.

Harry Maguireaccordian title

Harry was crowned Masterchef Champion 2025, after a stellar performance in which he beat off 59 of the best amateur cooks in the country! 

He said afterwards that the 12 week competition had been a life-changing, if stressful experience, which had tested his cooking ingenuity and skill to the max, but that he had loved every minute! The following are some of the wonderful comments from an emotional final:

Harry has now embarked upon a varied culinary career, which includes running his own private dining business and working in one of London’s top restaurants. He has also developed a significant online following with his lively and creative cooking videos, which highlight many of his favourite dishes and food influences.

Harry grew up and was educated in Edinburgh and began his foodie journey under the guiding hand of his mum and elder brother. This included a wide range of cooking styles and influences which, many years later, he introduced into his Masterchef performance. Whilst at university in Newcastle, he continued to develop his love for cooking and his culinary skills, by cooking for his flatmates.

The journey through to Masterchef Champion has not been an easy one, as Harry acknowledged during one of the episodes of the programme. He found the demands of a high intensity corporate career too much, and by his own admission he lost control of his life and drifted into a battle with addiction. After a period of recovery, he realised that a change was needed and decided to pursue his love for cooking. At this point he was not ready for work in a professional kitchen. So, ever the entrepreneur, he printed off a bundle of CV’s and proceeded to hawk his way, door to door, around the fishmongers and butchers of London. On day one, he landed a job with a fishmonger in Clapham where, as well as serving customers, he was able to develop his love for fish cookery!

Winning Masterchef has opened a dazzling new array of opportunities for Harry, which he is excited to explore. Working with the team at The Dorchester is an incredible  opportunity and privilege, which Harry will use to strengthen his understanding of the food and hospitality business.

Even in the short time since the show was aired, Harry has been lucky enough to meet a number of leading figures in the Industry and has forged many great friendships within the media and restaurant sectors. He looks forward to a varied and creative future, working alongside the best in the business!
